i made this for my women's bible study a few weeks ago (for our Christmas party with the men's small group) and made it again yesterday just because! it's super easy and super yumm.
1 (10 oz.) package of frozen chopped spinach, thawed and drained
1 (14 oz.) can artichoke hearts, drained and chopped
1 (10 oz.) container Alfredo-style pasta sauce
1 cup shredded mozzarella cheese
1/2-1/3 cups grated Parmesan cheese
1/2 (8 oz.) package cream cheese, softened
1/2-1tsp. garlic powder
place all ingredients into an 8x8 baking dish, mix it up, and bake for 30 minutes at 350F. i put a little extra Parmesan cheese on top about 10 minutes before it was done baking, and it looked (and tasted) oh so good! serve warm with tostito chips, crackers or toasted garlic bread for a sure to be party hit. =)
(i found this recipe on allrecipes.com, but tweaked it to my liking a bit, per other comments on the website. they actually suggest you use full cloves of garlic and roast them in your oven for like an hour, then peel them and squish them at the bottom of the pan, but i don't like a lot of garlic. so the first time i made it i used garlic powder instead of fresh and used a full teaspoon. i think the full tsp was a lot, so this time i just used a half and liked it much better. i used Ragu for the alfredo sauce, which comes in a 15oz. jar. on my first trial i used the full 15 oz. jar, but i thought it was just a little too creamy (people at the party gobbled it up!) but i won't use the full jar next time i make it.)
